e made some tamales yesterday following Rick Bayless’s recipe…Tamales de Dulce. It’s basically a ton of butter and sugar but is also mixed with masa, pineapple puree, and stuffed with raisins. Pretty good! However, we learned not to open them up right after cooking as they need a little time to dry and harden-up inside. Also… a good idea to include lard in the recipe as this prevents the masa from sticking to the corn husks.
